I’m Erica Trabulsi, chef and owner of Briar Hill Gourmet. I’m so happy that you’ve visited.
Food has been my life for as long as I can remember. I grew up in a multi-cultural, food-loving family, and by age 10, I was already obsessed with being in the kitchen. At 17, I started working in professional kitchens, and I’ve spent the past 30 years honing my craft in fine-dining restaurants across Hamilton, Oakville, Mississauga, and Toronto.
My classical training and lifelong career as a chef is what makes Briar Hill Gourmet the best in charcuterie. Every creation comes from a deep respect for ingredients, technique, and presentation — the same standards I lived by in the restaurant world.
I’ve also taught hundreds of students as a chef instructor, leading professional training, recreational cooking classes, and corporate team building workshops. Teaching sharpened my skills even further and reinforced my belief that great food is meant to be shared.
Charcuterie has become one of my favourite ways to express creativity as a chef. It’s about creating an experience and I’m grateful to everyone who allows me to share that experience with them.
Food will always be at the heart of who I am, but it’s not the only thing that inspires me. I am a huge music fan and I love animals, flowers, plants, trivia, and spending time in nature.
